Delicious clouds of vanilla Chantilly cream. Beautifully fresh strawberries. Combine them and they are able to bring balance with the perfect hints of sweet, tart, and creamy. We always select the freshest strawberries to make sure that only the best ones are used in each cake. For the cake sponge, our experienced chefs whip the eggs and fine Japanese sugar until it reaches the perfect ribbon texture, then they carefully fold in delicate flour, sourced directly from Japan. This makes the cake fluffy and moist. It’s then brushed with Kirschwasser syrup for a hint of cherry scent. For the added depth of flavor (umami), we use high-quality organic eggs. Their nutrient-rich diet gives each yolk a uniquely bold, orange color and provides the most flavor. This cake is as close to perfection as we can get.
